Morgane Seuillot from Burgundy and Christian Knott from Australia are the duo behind Domaine Dandelion near Saint-Romain in the Côte de Beaune, Burgundy. They work 2.2 hectares of Aligoté, Gamay and Pinot Noir vines by horse or hand. Organic and Biodynamic techniques are used in the vineyard and nothing is ever added to the wines. The labels are made at an old paper mill and include pressed flowers. The immaculate and artisanal approach to farming and winemaking in one of the most sought after regions has generated huge demand for their sublime and age-worthy wines.
Winemaking: Organic Pinot Noir grapes were harvested by hand. Whole bunch maceration in concrete tank before fermentation with indigenous yeast in old barrels. Aged in old oak barrels. No filtration, fining or added sulphur.
This Wine: This is the top cuvée from Domaine Dandelion which is only made in certain years when conditions are perfect. Taken from two different plots, both South-east facing. Light and delicate in style which reflects the elevation of these vineyards (the highest of the Domaine).
