From Constantina’s family’s oldest plot which is adjacent to their farm garden, farmhouse and old press. Decomposed granite soil with a lot of patches of limestone. Old vines of median age 70/80 years - some are 200 years old! Pet nat 11 months in bottle before being disgorged. Constantina is going against the grain of her region, she doesn’t use chemicals, herbicide, sulphite, etc… This is the first albarino pet-nat produced, and for all these reasons, she sees herself a bit like a witch like on the bottle.
